Restaurant Nielsen begins the year by presenting its first tasting menu for 2026, a proposal that marks the gastronomic direction of the house for this new stage. A menu designed to be enjoyed at leisure, where the product, the technique and the harmony of flavours are combined with an increasingly defined identity.
The experience opens with a fried taco with Wagyu beef jerky, fried quail egg and truffle, an intense and seductive start that plays with contrasts of texture and aromatic depth, preparing the diner for the journey to come.
The next dish is a subtle marine dish with a flan of scallops with fish stock and wild herb oil. Creamy, elegant and well-structured, the dish stands out for its balance and precise execution that respects the character of the product.
For the main course, the menu proposes a chateaubriand with cauliflower cream, miso and mushrooms, a dish that combines the nobility of the meat with vegetable and umami nuances, creating a rounded and sophisticated whole.
The closing is left to the diner’s choice between two very different options: premium cheeses with violet jam, an original proposal, or a creamy white chocolate with mango and parchita ice cream, fresh, aromatic and with a clear tropical inspiration.
